Garlic extract is derived from Allium sativum bulb material and belongs to the botanical extract category rather than the simple botanical powder category. Its characteristic chemistry is associated with sulfur-containing constituents, particularly alliin and compounds formed through the alliin–alliinase system. This distinguishes concentrated garlic extract from ordinary dried garlic powder and from aged or black garlic ingredients with substantially different processing histories and constituent profiles.
Commercial grades follow two main specification systems. Standardized extracts define a measurable sulfur marker, while ratio extracts describe the concentration relationship between raw botanical material and finished extract. These values serve different procurement purposes: marker standardization supports analytical control, whereas extract ratio communicates botanical concentration and cannot be converted directly into an alliin or allicin percentage.
Garlic extract powder is used in concentrated botanical supplements and selected functional formulations where reduced ingredient bulk is preferred to ordinary garlic powder. Its sulfur chemistry contributes a characteristic garlic aroma and taste, while processing conditions can influence ingredient behavior. Formulators should therefore evaluate odor management, blend uniformity, marker definition, and compatibility with other botanical ingredients during development.
