Ingredient Profile & Common Uses
Cultivated enoki used for commercial extracts is recognized as Flammulina filiformis. The older name Flammulina velutipes remains common in ingredient catalogs, specifications, and historical literature and is therefore relevant during sourcing and documentation review. Fruiting-body extract is distinct from whole enoki powder and mycelium-derived mushroom ingredients because extraction concentrates selected fungal constituents into a lower-inclusion dry ingredient.
Commercial grades are differentiated by standardized polysaccharide content, beta-glucan specification, or extraction ratio. The 30% polysaccharide grade provides a defined compositional target, while 10:1 extract is selected when buyers specify extract concentration rather than a standardized constituent level. Additional polysaccharide concentrations support different formulation, positioning, and ingredient-cost requirements.
Enoki extract is used mainly in mushroom supplements, multi-mushroom blends, functional powder systems, and selected food and beverage formulations. Compared with untreated mushroom powder, concentrated extracts can provide higher constituent density at a lower formulation weight. Product developers should still evaluate powder handling, wetting, dispersion, sedimentation, color, and characteristic mushroom flavor according to the intended finished-product format.
